Old City Smokehouse is located inside the North East corner of the Moat Square in Chiang Mai, in north west Thailand.

Our food is smoked by our resident Pitmaster, Deere, assisted by our master chefs Tum, Aoy and the team. They have added a wide range of Thai and classical western options to our smoked meats menu. Our special smoked meats are also available to order. We are constantly expanding the variety of smoked meat meals we offer, both dine-in and take-away, with the option of bulk cooked-meat deliveries in the highest quality BPA-free vacuum packaging available, sourced from our Italian suppliers.

Location.

Old City Smokehouse is located inside the North East corner of the Moat Square in Chiang Mai, in north west Thailand.  This part of the moat and old city is known as Si Phum Citadel, and our bar and restaurant at 357 Moon Mueang Road, overlooking the ancient walls that date from the year 1296 AD.  Meats have been smoked at the corner for at least 725 years.

Home Packs.

Our frozen products have been vacuum sealed in BPA-free packaging and frozen to provide the freshest quality possible for food delivery. You may store in the refrigerator for 7-10 days if it remains in an airtight container or vacuum sealed. If not going to eat in this time frame, we recommend you re-freeze as soon as you receive it.  It may be frozen for up to 6 months provided the seal is not broken.

Smoked Pork Spare Ribs – 400g – 500g

Spare ribs or “side ribs”, taken from the belly side, below the section of back ribs and above the breast bone. Spare ribs are flatter and are generally more tender than back ribs, but with a bit less meat. Three sauce styles (un-sauced ribs produced upon request – pre-order only): Carolinas, BBQ or Texas Tenders (medium spicy).

COOKING INSTRUCTIONS

Our home-pack smoked meat products have been vacuum sealed in BPA-free packaging and frozen to provide the freshest quality possible for food delivery. Upon receiving your product, inspect it to ensure it has not been damaged in shipping or that the seal is broken. 

You may store in the refrigerator for 7-10 days if it remains in an airtight container or is still vacuum sealed. If you are not going to eat in this time frame, we recommend you put it in the freezer again as soon as you receive it.  It may be frozen for up to 6 months provided the seal is not broken.  Thaw meats in the refrigerator rather than at room temperature.

Care and Preparation for Delivered BBQ meats
All cooking times are recommended for thawed products. For best results:

Hot water method (our preferred method):

  1. Thaw in the refrigerator
  2. Bring a pot of water to the boil
  3. Turn off the heat
  4. Drop in the rib / meat pack, still in the sealed vacuum bag
  5. Cover and wait fifteen minutes
  6. Remove from the water and open the vacuum pack
  7. Slide the ribs or meat onto a plate.

Medium heat oven method:

  1. Thaw in the refrigerator and remove meat from vacuum pack.
  2. To warm, moisten with water or sauce… be careful if using sauce not to let it burn during warming.
  3. Wrap in foil placing a little water in the foil, seal tight and place in a dish (cake pan, aluminium pan, etc).
  4. Place in preheated oven at 250 degrees F (120 C).
  5. Heat until warmed through and the desired temperature has been reached.

Microwave method:
Meats may be warmed in the microwave by cutting a small opening in the vacuum bag, moisten with a little water and heat to desired temperature. Be careful to only heat the meat to the desired temperature. Too long / too high will result in drying of the meat.

Our tribute to a great foodie – Route 66 meets Route 77 with a quarterpound+ (118gms) prime seasoned, then smoked beef patty, loads of caramelised onion, egg, cheese and Old City’s smoked sweet bacon, with southern Carolinas mustard-based sauce. Served with fries and salad. Another connoisseur’s delight.

The Pitmaster’s Burger

This is a meat-lover’s treat – a real monster burger. Two seasoned then smoked quarter pound prime beef patties (118 gms each, totalling 235+gms), with double cheddar cheese on each, in the middle, there’s a smoked jerk chicken fillet (making this a three quarter pounder), gherkin and pickled jalapenos and our special Old City Smokehouse sauce, Texas Tenders (medium spicy). Served with fries and salad.
